Bree's Tasty Recipes // Fav Lentil Soup

Not many people know this about me, but I absolutely love to cook & bake! I'm going to start sharing some of my day to day recipes I make with you, so you guys can enjoy them along with me! I love hearing your thoughts & learning new recipes, so if you have any for me please share in the comments :) 

This time of year I make a lot of soup 1. Because it's delicious & healthy 2. Inexpensive 3. Feeds a lot of people or gives me leftovers which is perfect for lunch or freeze for future meals 4. You can throw in absolutely anything you want! 
This lentil soup recipe is one of my favorites, so here's how it goes...

Ingredients you'll need:

-1 package dry Lentils (1 pound)

-2 containers organic chicken broth (8 cups)

-1-2 cups water (depending on size of pot)

-2 tbsp butter (I love Kerrygold Irish butter)

-1 large sweet onion chopped

-3 stalks celery chopped

-1 package baby carrots sliced

-10 to15 mushrooms sliced or 2 packages pre sliced any kind you like ( I used Shiitake   

  for this batch)

-1-2 ham steaks chopped

-garlic chopped (everyone has different taste levels with garlic, I used 3 cloves but you    

  may only use 1)

-2 bay leaves

-1/3 cup dried parsley 

-1/2 tsp thyme 

-1/2 tsp red pepper/cayenne (optional) I like spicy

-salt & pepper to taste 

For the chicken broth, I normally use my own homemade broth, but I was out this time. In the next post I will show you how I do that, it's very easy with so many health benefits! 

 

Directions: 

-Sauté onions, garlic, celery in butter for about 5 mins, until wilted & tender

-Add broth, lentils & spices 

-Simmer for 30 mins

-Add mushrooms, carrots, ham & 1-2 cups water depending on taste & how much 

 more liquid your pot can hold

-Simmer 30-45 mins at least covered stirring occasionally (simmer as long as you can,  

  makes for better soup!) 

-Make sure to taste as it simmers to see what extra spices might need to be added 

Voilà you have a hearty yummy healthy soup thats easy & inexpensive to make! I like to make cornbread & sliced pears to serve with my soup. For the cornbread I just buy Jiffy cornbread mix, follow the directions and add 1 tbsp sugar to it. Hope you all enjoy this recipe and remember cooking is all improvisation, so just go for it! Add what you like, don't add something if you're not into it, it's your creation I'm just giving you the outline!
